Beta Ionone’s multifaceted aroma straddles the line between violet, berry, and cedar depending on how it is used.  Described as fruity, woody, and dry, Beta Ionone is featured very commonly in berry flavors like strawberry, raspberry, cherry, and grape in addition to licorice.  In fragrances Beta Ionone tends to have more of a violet or orris aroma and its long tenacity can extend the life of an aroma.
