As certain common ingredients rise and fall out of fashion, consumers are seeking out alternatives to such cornerstones as salt and sugar. This is not only a result of the latest health-conscious thinking, but it is also being driven by cultural influences and shortages of certain ingredients.
2016 was spent by food culture highlighting the link between carbohydrates and obesity. In 2017 the focus has circled back to the time-honored target of sodium reduction. More brands are offering reduced salt versions of existing products and in many cases these health focused variants are on the top shelf position over their salty counterparts.
