Another island influence coming stateside: Ube.  Ube is a tubular root, much like a sweet potato but, intensely purple in color.  An essential in Filipino cuisine, Ube is often paired with a coconut or condensed milk. Its vivid color often garnishes a range of products including ice cream, pastries, breads, icing, hard candies and cake.  Alone, its intriguing flavor is sweet, creamy and nutty with a slight vanilla nuance.
