A crunch in the supply of vanilla beans has lead to a dramatic increase in pricing over the last couple years.  While natural vanilla has been comparatively pricey in the past this new bout of scarcity has worried many high consumption manufacturers.  This has lead flavor teams to try to reformulate in a way that retains vanilla’s complex flavor profile.  New natural sources of creamy and balsamic flavor characters are now being drawn on in the effort to weather the vanilla drought.
