Description of Summer Savory Oil

Unlike the wild-growing Satureja Montana plant, Savory Oil Summer is steam-distilled from Satureja Hortense, which is cultivated throughout much of Western Europe. The aroma of summer savory oil is sharp and biting, with a slightly bitter odor that differs greatly from its pleasantly fresh-herbaceous flavor. This makes the ingredient far less common in fragrance applications, though it does see some use in forest-type perfumes and masculine colognes. Summer savory is much better known for its contribution to meat flavorings, often added to canned sauces, seasonings, and vegetables. The flavor of this oil is most commonly compared to other herbal ingredients such as thyme and sage.
