Description of Heliotropine

Named for its resemblance to the aroma of the heliotrope flower, Heliotropine is a crystalline powder and one of the most popular flavor and fragrance ingredients of modern formulations. Sometimes referred to as “Heliotropin,” the powder retains a strong and sweet odor, though its flavor has creamy and somewhat nutty undertones. This adds a unique “softness” not found in similar ingredients such as benzaldehyde. Heliotropine’s powdery, floral characteristics are often used to provide vanilla or cherry-like nuances in both fragrance and flavor applications.
